UNC To Build A New Hospital In Wake Forest
UNC Health is taking significant steps to expand its footprint in Wake County, focusing on the growing community of Wake Forest. At a public hearing held Thursday at the McKimmon Conference & Training Center in Raleigh, discussions centered on UNC Health's plans to develop a new hospital in Wake Forest and expand services at its main hospital in Raleigh.
The organization recently submitted two Certificate of Need applications:
Wake Forest Hospital: A proposal to build a 50-bed community hospital on a 50-acre site currently owned by the Southeastern Baptist Theological Seminary. This site, located at the intersection of Capital Boulevard and Stadium Drive, is behind a shopping center anchored by Lowes Foods. Once operational, the hospital is expected to create over 500 jobs.
Raleigh Expansion: A plan to add 20 acute care beds and two operating rooms to UNC Health Rex's main hospital in Raleigh, enhancing its capacity to meet rising healthcare demands.
These developments underscore UNC Health's commitment to expanding access to healthcare in rapidly growing areas of the Triangle region.

Fire Fighter Rescue…
Korey Floyd didn’t expect to find a lifelong friend when he traveled to western North Carolina to help with disaster relief. But that’s exactly what happened when he met Lulu, a black-and-white pit bull mix.
“None of them knew who she belonged to,” said Floyd, a firefighter from Wake Forest. “We took her to the local shelter. They checked for a chip—there was no chip, no collar, no tags. So, we had no idea where she came from.”
Lulu was found wandering along a road in Mitchell County while Floyd was clearing storm debris and performing welfare checks after Hurricane Helene. The dog was treated for tick-borne diseases and worms before Floyd made a big decision.
“Everybody was joking, ‘Are you going to take her home with you?’” Floyd said. “Toward the end, we realized we probably would. We didn’t want her to end up in a pound.”
After spending time with first responders in western North Carolina, Lulu got a warm welcome in Wake County. She joined Floyd’s household, which already included a 3-year-old beagle mix named Winston, along with chickens, ducks, geese, and turkeys.
“The first meeting was great,” Floyd said. “They just kind of looked at each other funny at first, but then they were friends right away.”
Floyd describes Lulu as a happy, playful dog and a symbol of hope amid challenging times.
“I think she’s a reminder of how important life is,” Floyd said. “She’s a sign of hope. Good things can come out of tough situations. Western North Carolina will recover—they’re already making progress. Most of the time we were there, it was all about positivity and helping the community however we could.”

These recipes come right from my kitchen! 😋😋
This week’s recipe is from Grandma’s kitchen.
Deep-Dish Double Pie Crust
This recipe has been used for three generations in my family. I always make deep-dish fruit pies so I’m sharing this version of my recipe.
2 2/3 Cups all-purpose flour
1 tsp. salt
1 Cups ice cold Crisco® All-Vegetable Shortening (I only use Crisco)
6 to 10 tbsps. ice cold water (I typically put ice in a glass of water so that the water is extremely cold.)
DIRECTIONS
STIR the flour and salt in a large bowl until blended. Cut shortening into the flour mixture using a pastry blender or fork until the shortening pieces are the size of peas. Be patient. This is the most important step. You need the mixture as fine as possible. Gradually add water, 1 Tbsp. at a time. Stir with a fork just until the dough holds together and forms a smooth ball.
SHAPE the dough into a ball. Divide the dough in half and shape into two balls.
ROLL the dough on a lightly floured surface. Rolling from thecenter outward. For 9-inch pie plate, roll into an 11-inch circle. For 9 1/2-inch deep-dish pie plate, roll into a 12-inch circle. Transfer dough to pie plate.
