This week’s recipe is from Grandma’s kitchen.
Chocolate French Silk Pie
Ingredients:
For the crust:
1 1/2 cups vanilla wafer cookie crumbs (about 12 crackers)
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the filling:
8 oz. semisweet chocolate, chopped (or chocolate chips)
1/4 cup heavy cream
1 tsp vanilla extract
1/4 tsp salt
1 cup unsalted butter, softened
1 1/2 cups powdered sugar
3 large egg yolks, room temperature (see note on safety)
1 tsp vanilla extract
For the topping:
1 1/2 cups heavy whipping cream
1 tbsp powdered sugar
1 tsp vanilla extract
Chocolate shavings or curls (optional)
Instructions:
For the crust:
Preheat the oven to 350°F (175°C).
In a medium bowl, combine the cookie crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture holds together when pressed.
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
Bake the crust for 8-10 minutes, then remove from the oven and let it cool completely.
For the filling:
In a heatproof bowl, combine the chopped chocolate and heavy cream. Place the bowl over a pot of simmering water (double boiler) or microwave in 20-second intervals, stirring between, until the chocolate is fully melted and smooth. Stir in the vanilla extract and salt. Let the chocolate mixture cool to room temperature.
In a large mixing bowl, beat the softened butter and powdered sugar on medium-high speed until light and fluffy, about 3-4 minutes.
Add the cooled chocolate mixture to the butter mixture and continue beating until smooth.
Add the egg yolks one at a time, beating for about 1 minute after each addition. Scrape down the sides of the bowl as needed. Beat the mixture for another 3 minutes until fluffy and smooth.
Pour the filling into the cooled pie crust and spread it evenly. Refrigerate the pie for at least 4 hours, or overnight, to allow the filling to set.
For the topping:
In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form (about 3-4 minutes).
Spread the whipped cream over the chilled pie, smoothing it into an even layer.
Garnish with chocolate shavings or curls, if desired.
Serve:
Slice the pie and enjoy! It’s rich and creamy, with a smooth chocolate filling and a light whipped topping.
