On January 14, 1997, Linda Strother, a retired public health nurse, discovered The Healing Place of Louisville, Kentucky, while searching for solutions to address homelessness and addiction in Wake County. This discovery led to the establishment of Healing Transitions, a nonprofit organization dedicated to providing shelter and recovery programs for individuals facing homelessness and substance abuse issues in the area.

Healing Transitions has since become a vital resource in Wake County, offering comprehensive support services to those in need.

Martin Luther King Jr. Celebrations in Wake County

Bourbon Salmon

Ingredients:

• 4 salmon fillets (6 oz each)

• 2/3 cup bourbon

• 3 tbsp soy sauce

• 3 tbsp brown sugar

• 1 ½ tbsp Dijon mustard

• 2 tbsp olive oil

• 2 - 3 cloves garlic, minced

• 1 tbsp lemon juice

• Salt and pepper to taste

• Fresh parsley for garnish

Instructions:

• Prepare the marinade:

  • In a small bowl, combine the bourbon, soy sauce, brown sugar, Dijon mustard, olive oil, garlic, and lemon juice. Stir well until the sugar dissolves.

• Marinate the salmon:

  • Place the salmon fillets in a shallow dish or resealable plastic bag.

  • Pour the marinade over the salmon and let it marinate in the refrigerator for at least 30 minutes, preferably 1 hour.

• Preheat the grill or skillet:

  • If you're grilling, preheat the grill to medium-high heat.

  • If using a skillet, heat it over medium heat with a little oil or cooking spray.

• Cook the salmon:

  • Remove the salmon from the marinade (reserve some marinade for glazing).

  • Grill or cook the salmon fillets for about 4-5 minutes per side (depending on thickness) until the salmon is cooked through and flakes easily with a fork.

  • If using a skillet, you can glaze the salmon with the reserved marinade in the last minute of cooking for extra flavor.

• Serve:

  • Serve the bourbon salmon with your favorite side dish, such as roasted vegetables or a fresh salad.

  • Garnish with freshly chopped parsley if desired.
